The sweet potatoes led the charge with this meal. And I LOVE sweet potatoes! So that was a good thing! The sweet potato/kale mixture was soooo yummy. And it felt like a pretty hefty portion of them as well. The chicken was OK - I just wasn't really in the mood to eat a lot of it, so I left about half of that on my plate. But the veggies - I cleaaaned off my plate.
This dish came in at 426 calories. With a super simple ingredient list, which I LOVE to see, and a pretty good nutrition label, I was happy! This made for a very well-rounded meal.

Yes! I love dishes that are veggie heavy and I also love sweet potatoes! Plus, I like the idea of getting in a little serving of greens as well.
